Zucchini “noodles” are fine as long as your keep your expectations low. They are not nor will they ever be the glory that is PASTA. However, if you are riding the lonely low-carb train (which we just jumped back on) it’s a fun way to trick yourself into eating veggies.
Spiralize 2 large zucchinis. Chop 1/4 of an onion. Heat up about 3 Tbs butter (Kerrygold is best of course) in a pan (I use my wok) throw LOTS of garlic and enjoy the smell. Add onions. Add a few handfuls of cooked shrimp. Add zoodles, salt and pepper, and a nice squirt of lemon juice. You can also add chopped fresh parsley which I forgot. Cook for a few minutes. (Zucchini should be Al Dente, it’s gross when soggy) and top with parmesan cheese.
Easy, quick, carb-free and fairly cheap! I buy the big bags of frozen shrimp from Costco. If your looking for a spiralizer, I like this one from Amazon.
